Saint-Georges Côte Pavie is an exceptional property for the quality of its terroir on the ideal location of the famous hillside of Pavie.

Area: 5 hectares

Location: 5 ha on the hillside of Pavie, .

Soil: Clay-limestone.

Basement: Molasse.

Planting density: 5000 to 6000 vines/ha.

Rootstocks: Fercal, 420A, 41B, Riparia and 3309C

Grape varieties: 80% Merlot, 20% Cabernet Franc.

Average age of the vineyard: 25 years

Cultivation: Plowing and traditional ways. Grass cover.

Harvest: Manual

Production: 37hl/ha

Harvest reception: Destemming and densimetric sorting 

Press: Hydraulic vertical.

Fermentation: In thermo-regulated concrete vats.

Maceration: 3 to 4 weeks.

Malolactic fermentation: In barrels (30% new barrels).

Blending: Selection and blending of batches in March.

Second wine: Côte Madeleine.

Ageing: 18 to 20 months in barrels in an air-conditioned cellar.

Racking every 3 months.

Bottling: At the château, approximately 20 months after harvest.
